Margie and I seem to have small amounts of leftovers that we retain between bigger meals for snacks and such. And when we run short of storage containers, I rummage in the refrigerators for something that sounds good. We had a good supply of mashed potatoes left over from our Thanksgiving on the boat at Ft. McRee with friends. I have always liked chopped ham in my potato soup, and the internet suggested chopped broccoli and cheddar cheese. I found some white onion that i had sauteed in butter left over from our Thanksgiving Sunday brunch with my daughter and her husband, and a couple of pork ribs that had been smoked with Apple wood.

I cut the pork meat off the bones and chopped them up well. I had some frozen broccoli in cheese sauce that i popped in the microwave and chopped up, dumped all of that into mashed potatoes, added a cup of half and half, seasoned with a bit of salt and pepper, and brought it up to temperature.

I figured it couldn’t be THAT bad, so i went searching for some appropriate vino! I found some 2011 Bucephalus Napa Red Blend that had been sitting on the shelf a while. As the soup approached serving temp i tasted it. WOW! What a wonderful collection of flavors!! Then a sip of wine, WHOA NELLY. The wine was heavier but only slightly so. With all of the various ingredients, it turned out I had enough for two more meals.

With a bit of imagination and a good bottle of wine, life is good. And I freed up some storage containers!
