A couple of days ago I discovered we were running low on food storage containers and refrigerator space, so I began rummaging for ingredients! Found some left over mashed potatoes and began the makings of some soup. I nuked a cup of frozen green peas and then three strips of bacon. Chopped up the bacon, added the peas, and mushed up the mashed potatoes with a half cup or so of Half and Half. Added a bit of salt and pepper and had a tasty couple of meals.
I went wine searching for a everyday red pour and found three bottles of 2020 Etna Rosso Calcaneus from Sicily/Italy. It was a nice wine and went well with the potato soup, but a bit light.
I looked it up on the internet and it receives high marks. Perhaps I was the victim of a not so hot batch. Unusual for most Italian producers.
But as Dennis Miller so aptly puts it, “….but that’s just my opinion!”
